Quinoa Chili
This vegetarian Quinoa Chili, protein-packed recepe is the perfect bowl of comfort food that you can eat guilt-free!
INGREDIENTS for a delicious Quinoa Chili
- 1 T olive oil
- 2 onions, finely chopped
- 2 stalks celery, chopped
- 1 carrot, peeled and chopped
- 2 green peppers, chopped
- 4 cloves garlic, minced
- 2 T chili powder
- 1 can (28 oz) diced tomatoes with juice 2 c vegetable stock
- Salt and pepper
- 1 cup quinoa, rinsed and drained
- 2 cup pinto beans, drained and rinsed
- 1 cup corn kernels
- Sour cream for topping
Add this & Add that
In large skillet, heat oil for 30 seconds, add onions, celery, carrots, pepper and garlic. Reduce heat to low. Cover and cook veggies til softened, about 10 minutes. Increase heat to medium.
Add chili powder and stir for 1 minute. Add tomatoes and stock and bring to boil. Season to taste with salt and pepper. Add quinoa, beans and corn and cook, stirring until mixture returns to boil.
Almost Finnished with the Quinoa Chili
Reduce heat to low. Cover and simmer until quinoa is tender, about 25 minutes.
Top with sour cream to serve
